The best nachos you will ever eat... ever

For Super Bowl Sunday, I decided to get festive and make something.  I didn't want it to be too complicated.  It needed to taste good.  And mostly I wanted people compliment my work.  Soooooooo I called my mom and asked her about the nachos she used to make for me and my friends when we were kids.

I'm pretty sure the inspiration came from Planet Hollywood.  My first experience there was as a fourth grader in Canada -- our family had gone on a trip there during Easter.  Not going to lie, we had a may-jah struggle trying to find food we liked (we could not find a green vegetable within a 10 mile radius).  So this meant going to Planet Hollywood and nomming.

Planet Hollywood is like Disney World to me because I get uber excited looking at old set pieces and wardrobes from my favorite movies.  It just has this aura about it.  I can't explain it really, but in addition to all the cool stuff, they had food we all liked to eat.

Cue the Barbecue Chicken Nachos.

Here's all it takes:
  • 1 bag Tortilla Chips (I prefer regular ol' Tostitos, or you can do the gluten-free option from Whole Foods)
  • 1 bag Shredded Cheese (Pick your poison -- I opt for the shredded Mexican cheese from Kraft)
  • 3/4 bottle of Barbecue sauce (K.C. Masterpiece or Rudy's)
  • 3 cans of chicken  (Yes, canned.  I know it sounds disgusting but it's amaze when baked.  Or you can go get one of those rotisserrie chickens and pull it apart)
Get a baking sheet and put about half the bag of chips on it.  Top with the shredded cheese, making sure each chip is covered.  Take the barbecue sauce and drizzle over top.  Then, in a bowl, open the cans of chicken and mix them all together so they are "shredded" and not clumped together.  Place chicken on top of chips.

Then, do the same thing again: cover with the rest of the chips, sprinkle on the rest of the cheese, top with more barbecue sauce and use the remaining chicken to top it all off.

Bake in the oven until the cheese melts and voila!  You'll have a tasty late night snack, great dish for sporting events or perfect for (what else) a barbecue!
